Joe and I are desperately looking forward to this week being done and over. And then I remind myself, it's only Wednesday.
Remember that monsoon from last Sunday? Well Joe was called out at 5pm on Sunday along with every other lineman for restoring power to everyone. By 11am Monday morning, he was sent home for mandatory rest and was told to return at 6pm for another brutal 16 hour shift. Guys, those storms were bad. I had no idea how hard the lakeshore area was hit since our house sits in this little pocket that somehow avoids all the damage.
Since Joe was out all Sunday night and Monday morning, that gave me the opportunity to drop Conner off at his new daycare for his first day. That was special for me. I also had the opportunity to pick him up... three hours earlier than anticipated. Why so early? Well, what we suspected was a fading case of roseola actually turned out to be hands foot mouth disease.
Ughh.
Do you know how terrible we felt sending Conner to his new daycare around all those little kids and finding out that he may have passed it along? Terrible. More than terrible.
So, Conner has been home with me while I try my hardest to keep up with work schedules and meetings, and Joe has been on the exhausting cycle of work 16 hours, off 8 hours, on for 16 hours, off 8 hours. There seems to be no end to this cycle.
With exhaustion and lack of time being the challenge this week, lunch needed to be something simple. And the one delicious, filling, and healthy thing that came to mind are sesame ginger chicken wraps. They are so easy and so good that I had to share the recipe with you all.
Sesame Ginger Chicken Wrap
1/2 c. (or 2 1/2 oz.) chicken breast, cooked and shredded*
1 1/2 c. shredded tri-color cabbage (aka coleslaw mix)
2 tbs. Newmans Own Sesame Ginger Dressing
1/3 c. thinly sliced and chopped cucumbers
1 spinach herb wrap (I like Xtreme Wellness)
thinly sliced onion, enough for your preference
salt and pepper to taste
*I usually throw 2-3 chicken breasts in a small crockpot and then use it throughout the week to save on time.
Place all the ingredients (except the wrap) in a bowl and toss well to get even coverage with the dressing. Pour it onto your wrap and enjoy.
For the size of wraps I have, there is easily enough filling to make two complete wraps, but I barely have enough room in my stomach to fit just the one wrap. As you can tell from the picture, I struggled to form it into an actual wrap, so I folded it and ate it taco-style.
