What's Cooking | Barbacoa Burrito

Ever since last week, I have had a strong craving for some Chipotle.  The bad news is that there is no Chipotle anywhere near this area.  Period.  Out of luck.  So that of course led me to perusing the internet for a good Chipotle substitute that I could make myself and fulfill this pregnancy craving once and for all.
 
 
Barbacoa Burrito

4lb chuck roast, trimmed and cut into large chunks
2 tbs vegetable oil
1/3 c. apple cider vinegar
4 garlic cloves, minced
4 tsp cumin
2 tsp oregano
1 tsp ground black pepper
1 tsp salt
4 chipotle chiles in adobo sauce
3 tbs lime juice
1 1/2 c. chicken broth
3 bay leaves
 
Combine apple cider, garlic, cumin, oregano, pepper, salt, chiles and lime juice in a food processor and puree until it becomes a blended sauce.
 
Heat the vegetable oil over medium high heat and sear all sides until it is nicely browned. Transfer the seared meat to your crockpot.
 
Pour your sauce from the processor over the meat.  Add the chicken broth and bay leaves.  Cook on high for 6 hours or low all day until the meat can be shredded easily.  If you take the meat out to shred, be sure to place it back in the crockpot to absorb more of the juices and avoid getting dry and put your crockpot on warm.
 
I whipped up some quick pico de gallo and cilantro lime rice to go with the burritos.  Nothing was really measured out, but you can make your own with the following ingredients and flavor it based on your personal preference.
 
Pico de Gallo
4 Roma Tomatoes, chopped
1/4 medium onion, chopped
1 garlic clove, minced
lime juice
salt
cilantro, finely chopped
 
Mix all ingredients in bowl.  I never measure the lime juice, salt or cilantro.  I just add it until I like the flavor.
 
Cilantro Lime Rice
4 c. rice, cooked according to directions
lime juice
salt
cilantro
 
Mix all the ingredients in a bowl.  Again, I don't measure out the lime juice, salt or cilantro.  I just go by whether I think it tastes good, and it does.
 
After that, it's time to assemble into one delicious burrito.  I typically use the following to build my burrito:  soft shell tortilla (I like Old Mission - super soft), canned black beans (rinsed and drained), cilantro lime rice, barbacoa, Mexican blend cheese, pico de gallo and top it off with some plain greek yogurt and chopped romaine.
